What comes to your mind first when you hear Belgium? Chocolate, Waffles, Fries? Well, I do not blame you for that. We all are hooked to the finest chocolates and waffles Belgium has to offer. However, what if I told you that the Belgians have presented to the world an overabundance of dishes beyond what we already know.

The country traditionally prizes regional and seasonal ingredients, including potatoes, leeks, grey shrimps, and asparagus. Although their culinary fare boasts of distinctive national dishes, including hamburgers and spaghetti Bolognese, there are plenty of dishes and products that are local to specific areas.

Often considered an exquisite blend of the food styles of France, Germany and Netherlands, the Belgian cuisine is made keeping in mind the flavours rather than its looks. Talking of which, here is where Soni Kumari Rana, Jr. Sous Chef at ITC Windsor comes into the act. She not only makes Belgian food taste good but also makes it Instagram worthy with its eye-pleasing presentation.

Starting yesterday, ITC Windsor at Raj Pavilion is showcasing Best to Belgium to satiate both your junk and fine dining cravings until late this month.

Three dishes by Chef Rana that is my absolute favourite and celebrates Belgian food as nothing else does. Considering the Belgian food festival at Raj Pavilion will have a rotating menu, which means the dishes listed below may not be on the menu when you decide to dine. Well, you can always pray that these are retained.

Waterzooi Stew

If you thought simple food cannot be tasty, you have to taste Chef Rana’s version of the Belgian delicacy, Waterzooi Stew. The freshness of the finely rolled vegetables and the loudness of chicken chunks under the pool of creamy stew, sets the tone for the rest of the meal, with the beautiful Bangalore evening playing the muse.

Lamb Carbonade Flamande

Chef Rana brings this traditional Belgian affair to life with her creative spin. Originally, this dish hero the beef or pork but Chef Rana plays around with chicken and nails it with powerful flavours. Made with beer and seasoned with thyme leaves, this dish will power your mood and your soul. Chef retains the traditionally served potato edges but adds a healthy portion of flat noodles, making it a wholesome dish. Moreover, I bet if you can hold yourself from licking that sauce off the plate, I BET.

Belgian Flourless Chocolate Cake

Scroll up and check what I had mentioned about Chef Rana. I will save your time and repeat - She not only makes Belgian food taste good but also makes it Instagram worthy with its eye-pleasing presentation. Here is the proof. I will not do much talking here, just let you admire this beautiful dessert.

Belgian Hot Chocolate with Cookies

This is pure sorcery from Chef Rana. I kid you not, hot chocolate has never tasted so good in my entire life, like never! We were first served with a plate with cookies, cashews, a torched marshmallow and a chocolate cupcake with a glass of milk on the side. Confused as hell, I could only think that this cannot be the conclusion to an epic Belgian meal. Thankfully, that wasn’t to be.

Chef Rana stepped in and asked to just dip the ‘edible’ cupcake. That is the drama I needed after a few ‘stressful’ seconds. The edible chocolate cupcake immerses in the milk to complete the lip-smacking, finger-licking Belgian hot chocolate.
