‘SunyAqua’ (pronounced Shunya (Zero) Aqua), a path-breaking initiative under the ‘Responsible Luxury’ umbrella includes water, infused with indigenous ‘good for you’ herbs. ŚūnyAqua tends to enhance the wellness quotient of drinking water at ITC’s hotels whilst ensuring a planet positive experience; with the sourcing and bottling taking place within the premises of each ITC luxury hotel.
What?
The two variants on offer in this process include:
Tulsi (holy basil) and Fennel & Cinnamon blend.
• Tulsi or the Holy Basil, known as the ‘elixir of life’, is highly revered for its divine benefits to enhance memory, purify blood, control sugar level in the body and to help relieve stress.
• Fennel & Cinnamon, on the other hand, together exhibit antioxidant properties, that help deliver warm energy to the body, aiding in vascular health and brain function. This accompaniment for dinner is served in the evenings at all ITC Hotels’ speciality restaurants.
How?
ŚūnyAqua, a zero-mile water crafted with a sophisticated in-house Water Purification System includes Ultra filtration through sand, carbon, iron and fluoride, Reverse Osmosis (RO System), Chemical Disinfection, Deionization and UV disinfection that removes the contaminants. The treated water passes through an Ozonator and subsequently a PH correction meter, to stabilize the PH where the infusion of the herb essence takes place and the final pure treated water is sealed after due quality check processes. Researched, perfected and curated with beneficial essential oils extracted from herbs, ITC Hotels’ R & D Chefs ensure that the wellness quotient of the water is enhanced for the betterment of the guests.

Globally, overfishing is perceived as one of the biggest threats to marine ecosystems. It is said that today over 80% of the world's fish stocks are either fully exploited, overexploited, depleted or recovering from depletion. Based on Responsible Luxury, “Choose Wisely” is a concept focused entirely on empowering and enabling our guests with the ‘luxury of choice’.
What?
ITC Hotels is India's first participant in WWF's ‘Choose Wisely’ Programme - a collaboration with the Central Marine Fisheries Research Institute, aimed at promoting learned choices on fish consumption, whilst leaving the decision making to the consumer. To provide our guests with the ‘luxury of choice’, WWF has designed visual indicator(s), that have been applied to ITC’s restaurant menus to communicate relative fish scarcity in an easy-to-understand format that consumers may follow to make a responsible choice at the point of ordering.
How?
Choose Wisely not only facilitates the luxury of choice to guests but also encourages our Chefs to create sustainable alternatives of marine produce and conceptualise innovative recipes.

While continuing to build on the international cuisine repertoire and brand portfolio, ITC Hotels’ showcases cuisine that highlights unique, undiscovered, royal and forgotten aspects of the Indian culinary scape that are aptly held under the aegis of the ‘Kitchen of India’ series.
What?
Pertinent to leverage the strength in Indian cuisine – the ITC Hotels showcase a window to India; inhabiting the past and the present, ensuring that we retain at top of mind recall as torchbearers of India’s culinary legacy.
How ?
Adding to this concept, ‘Local Favourites’ is a prominent feature at all ITC 24*7 restaurants and in-room dining. Put together by our “Food Sherpas” (The Chefs) the ‘Local Favourites’ displays a selection of indigenous flavours that the locale has to offer. To name a few , the Vada Pav (Maharashtrian) served at ITC Maratha and Bombay Sandwich / Bohri Biryani (Mumbai Specialties) offered by ITC Grand Central are considered most preferred by our guests.
An embodiment of the ‘Responsible Luxury’, an aspect of ‘Rooted to the Soil’; ITC hotels are a window to the cultural ethos of the region / location they are situated in. Technological invasion has therefore augured the era of the ‘Room Service Renaissance’ leading to appreciation of the WelcomMeal concept.

The WelcomMeal, a composite in-room dining experience of a well balanced, bespoke meal envelopes a menu ranging from Indian/ Regional Indian to Oriental and Western including the essential components of fibre, protein and carbohydrates.
How?
In keeping with the ITC Hotels tradition, the WelcomMeal leverages the local cuisine of the region where the Hotels’ are located in, ensuring offerings that include ITC’s Signature Brand cuisine. The ‘farm to plate’ approach at the WelcomMeal ensures that whatever offered to the guests is categorized under fresh produce with indigenous flavours, whilst also creating a sustainable livelihood for the farmers living in the region.

Why?
Studies have shown the correlation between drowsiness and the overconsumption of specific food designed to generate energy in the body. To counter the spike of the surge that is created by breaking the food into glucose, insulin is released, which helps mop up the excess glucose in the blood to restore the blood sugar and bring it to its normal count. This increase causes the brain to produce more serotonin and melatonin - the two neurochemicals that induce drowsiness. Following this idea, the Alert Meets has prepared a carefully designed menu to keep its guests healthy and focused.

Alert Meets is aimed at enabling its guests the luxury of making informed choices, thereby improving the consistency of the M.I.C.E. experience at ITC hotels. The thoughtfully curated menu selection comprises of a range of deliciously varied organic food which focuses on delicious, hearty and healthful, revitalizing gourmet preparations that use seasonal produce and the finest of ingredients.

Designed to improve blood circulation and blood supply to the brain; key factors in avoiding a condition commonly referred to as ‘food coma’, or the lethargy and overwhelming urge to nap after a meal, ITC Hotels introduced ‘Alert Meets’, a menu selection that is masterfully prepared and locally sourced to keep guests mindful and focussed.

What?
Including local flavours, comfort foods, and forgotten foods with an emphasis on fresh and seasonal produce, each dish presented at the Signature Mornings is guided by a ‘caringly sourced; mindfully prepared’ approach to showcase - locally sourced, free range, Indian Super foods, forgotten ancient grains, ‘good for you’ breads with increased focus on gluten free and lactose free breakfast options.
How?
A ‘High Impression’ dining experience, Signature Mornings are a new take on Classic Breakfast Signatures. Highlighting some basic favourites like Muesli and Berry Brulee flanked by Amaranth (ancient Indian grain ‘rajdana’) and Jaggery Brittle Finger Millet (Ragi) and Almond meal pancakes teamed with aloe vera and black currant chutney, Signature Mornings display a new take on Classic Breakfast Signatures. Specially crafted for ITC Hotels, the Eggs Benedict, is prepared with Free Range eggs and pampered with extra virgin olive oil hollandaise, accompanied with locally sourced Birchwood smoked chicken rashers that replace the oft used staple of bacon or ham that are specially crafted for ITC Hotels. The changing edition of this menu every quarter gives us the opportunity to bring forth and share ‘Breakfasts of the World’ and Indigenous signatures reimagined.

Invoking the time-honoured principle of promoting physical and emotional well-being through food, Swasthya Cuisine brings to its guests an ideal combination that has been selected to enhance both internal and external well-being.
How?
As purveyors of ‘Responsible Luxury’, Swasthya Cuisine presents fresh, farm-to-plate dishes that are prepared to address both nutritional requirements as well as taste, the result of which is an enjoyable mélange of modern and re-imagined flavours promoting wellness that restore, energise and calm the mind to uplift the mood.
Presenting the right combination of ‘Prakriti’ - the science of how the body reacts with food, the Swasthya Cuisine displays food tropology, which is the art of combining the right food combinations.
Swasthya showcases super foods of forgotten & traditional grains, like the use of red/brown rice instead of white polished rice, it also offers boiled amaranth and other millets, healthy meats like chicken and fish, cold pressed indigenous oils like mustard, sesame and desi ghee, buckwheat / moonbeam / Konjak noodles instead of regular flour, farm vegetables and Veggie Salads with light dressings, healthier substitutes like sweet potato, turnips and parsnip mash instead of potato, drier preparations instead of saucy/Oily gravies, multigrain breads instead of refined flour bread, and low sodium food. Swasthya refrains from using refined flours and sugars – it rather follows the process of stir frying, steaming and sauté , using equipments like air fryers and slow cookers - which are the right cooking method to preserve nutrients.
Offering extra fibre and nutrient dense supplements as boosters into cereals for the morning breakfast with added sprouts and healthy fresh juices, Swasthya food includes more starches with gluten-free variants, where sugars with natural sweeteners like dates, figs, apricots, fresh fruit purees, jaggery & honey are used.
